  • 2 oz fresh pink grapefruit juice
  • ¼ oz rosemary syrup
  • ½ oz fresh lemon juice
  • 6 oz chilled wheat beer or pilsner
  • Ice

Method

  1. 1Build grapefruit juice, rosemary syrup, and lemon juice in a chilled highball over one large cube.
  2. 2Top slowly with the beer so the head stays tidy.
  3. 3Give the drink one gentle lift and serve at once.

Occasions note

Choose a dry, citrusy beer rather than a heavily hopped IPA; the rosemary should read aromatic, not medicinal.

Batch note

Make it for a crowd.

For 8, combine 16 oz grapefruit juice, 2 oz rosemary syrup, and 4 oz lemon juice in a chilled pitcher. Pour 2¾ oz into each glass and top each with 6 oz beer just before serving.
