- 2 oz fresh pink grapefruit juice
- ¼ oz rosemary syrup
- ½ oz fresh lemon juice
- 6 oz chilled wheat beer or pilsner
- Ice
Method
- 1Build grapefruit juice, rosemary syrup, and lemon juice in a chilled highball over one large cube.
- 2Top slowly with the beer so the head stays tidy.
- 3Give the drink one gentle lift and serve at once.
Occasions note
Choose a dry, citrusy beer rather than a heavily hopped IPA; the rosemary should read aromatic, not medicinal.
Batch note
Make it for a crowd.
For 8, combine 16 oz grapefruit juice, 2 oz rosemary syrup, and 4 oz lemon juice in a chilled pitcher. Pour 2¾ oz into each glass and top each with 6 oz beer just before serving.
