- 1½ oz white peach purée
- ¼ oz basil syrup
- 4 oz chilled Prosecco
Method
- 1Add peach purée and basil syrup to a chilled flute.
- 2Top slowly with Prosecco.
- 3Give one gentle lift only if needed.
Occasions note
Use ripe peach purée and a restrained basil syrup. The result should feel like fruit, not candy.
